Recipes We Love: Gluten-Free Shortbread

Breakfast treat, afternoon snack or delightful desert, there's nothing like the lovely, buttery taste of shortbread. This recipe is especially wonderful because it's gluten-free!

Gluten Free Shortbread

½ cup brown rice flour
½ cup white rice flour
½ cup tapioca flour
2 tsp. xanthan gum
1 tsp. vanilla
½ c. confectioners sugar
¾ cup butter (room temperature)

mix all well, press into shortbread pan(s) bake @ 325 degrees for 35 minutes

I have been wondering how to make GF shortbread. I look forward to trying this. How can you go wrong with this much butter? Yum!
